How to make prosciutto & asparagus bundles

The trick with these bundles is to use thin asparagus, so it roughly matches the cooking time of the prosciutto. Really thick, stalky asparagus will take too long to soften, by which point the prosciutto will be charred black. So, make sure to pick up thin asparagus (about the size of a pencil).

We took 3 to 4 asparagus and wrapped them with a single slice of prosciutto. We thought we might have needed toothpicks to hold them together, but we didn’t need them at all. The tension of the prosciutto wrap holds them together, even after they’ve been cooked.

Once the bundles have been prepared, lightly brush them with olive oil and place them on the grill grate over the fire. Or, if your campsite’s grill grate is looking pretty gnarly, you can use a cast-iron skillet with a little bit of oil in it. With a pair of fire-safe tongs, flip the bundles to ensure all sides are cooked. When they’re ready: pull them off, sprinkle with grated parmesan, and drizzle with some lemon juice over them.

Essential equipment

Foldable Grill Grate: Most campground grill grates are in less than ideal condition. So make sure you always have a clean grate to cook over by bringing your own.

Collapsible Charcoal Chimney: Using a chimney + hardwood charcoal allows us to go from no fire to cookable embers in 15 minutes (vs trying to burn whole logs down to embers).

Metal Tongs: Using long metal tongs to flip and move the asparagus bundles will make cooking over the fire easier (and safer!).

  • 1 bunch asparagus, thin stalks if possible
  • 8 slices prosciutto
  • 1 tablespoon olive oil
  • Sea salt
  • 2 tablespoons grated parmesan cheese
  • 1 small lemon

  • Create the asparagus bundles by wrapping a slice of prosciutto around 3-4 spears of asparagus, then brushing with olive oil and sprinkling with salt.
  • Place the asparagus on the grill and cook, 4 minutes on each side. Remove from grill, sprinkle with parmesan cheese and a squeeze of lemon. Serve immediately.
