Dehydrated pasta releases less starch when it’s cooked on trail (think of how cloudy the water is after cooking pasta at home), which we think can make the sauce a bit gummy. Based on other reviewers, though, it sounds like this particular recipe works even if you don’t dehydrate the pasta first, so it may just come down to personal preference.

This recipe was the hit of the trip. I cooked and dehydrated Creamette brand Mafalda pasta for the noodle portion. All six of us enjoyed this meal very much. Your meal suggests are for pansies.
